SO a few weeks ago me and the kids took 3 of the recipes and had a bake off.
It was pretty fun!
Here they are in order that we liked them.
No-Bake Granola Bars:
No Bake Granola Bars
1/2 cup coconut sugar
1/2 cup honey
3/4 cup butter
1 tsp vanilla
4 cup rolled oats
1 cup chopped nuts
1 cup add-ins (coconut, nuts, raisins, etc.)
Cook sugar, honey and butter in small pot over low to medium-low heat until slowly bubbling, stirring often.
Leave on the heat for at least 10 minutes after boil.
In large bowl, mix oats, nuts, add-ins (except chocolate chips).
When liquid is finished on stove, remove from heat and add vanilla.
Mix liquid into oat mixture (Add chocolate chips after cooled - fi desired).
Press into 9x13 pan lined with wax paper.
Refrigerate and cut into bars.
Pecan Granola:
Pecan Granola
1/3 cup coconut oil, melted
1/2 cup coconut sugar
1/2 cup honey
1 Tbsp vanilla
3/4 tsp cinnamon
1/2 tsp salt
3 cups rolled oats
2 cups pecans, coarsely chopped
1/2 cup unsweetened coconut
Preheat oven to 300 degrees.
Spray 2 baking sheets with Pam.
In large bowl combine oil, sugar, honey, vanilla, cinnamon and salt.
Add oats and pecans.
Divide mixture between 2 baking sheets.
Bake 15 minutes - stirring occasionally.
Add 1/4 cup coconut to each sheet and bake 15 more minutes.
Let cool.
Pecan-Molasses Granola:
Pecan-Molasses Granola
1/3 cup unsulfered molasses
2 Tbsp coconut oil
1/2 tsp cinnamon
1/2 tsp salt
3 cups rolled oats
1 cup coconut
1 cup pecans, roughly chopped
Whisk molasses, oil, cinnamon and salt.
Add oats, coconut, pecans.
Put on baking sheet.
Bake 325 degrees for 20 minutes.
Let cool 30 minutes.
*Be careful not to cook too long. I think we cooked ours a little too long (25 minutes)*
