I told them I had a STELLAR snack ready for them!

and Quinoa Cookies
This is the first time since school started that I have ALL of my kids home after school.
Boy is it nice!
This is H trying not to show how much he likes these cookies! He is one of my toughest critics!
I found these cookies from Chocolate Covered Katie here.
Most everything I have tried from her has been SO good!
And these didn't disappoint! The kids all agreed that I could make these again. Yay!!
Chocolate Chip Quinoa Cookies
1/2 cup minus 1 Tbsp quinoa flour
1/4 tsp baking soda
1/8 tsp salt
2 Tbsp coconut sugar
2 Tbsp xylitol
2-4 Tbsp chocolate chips (optional)
up to 2 Tbsp milk
1/2 tsp vanilla
1 Tbsp plus 1 tsp coconut oil
Preheat oven to 310 degrees.
Mix dry ingredients.
Mix wet ingredients.
Combine wet and dry ingredients.
Add more milk if needed.
Shape into balls.
Flatten slightly.
Bake 8-9 minutes (leave on tray for 15 minutes if you can wait that long :)
These make 6-8 cookies. I doubled the recipe and it was the perfect amount for an after-school snack.
