Warm Chocolate Cake

This was SO timely!

Shawnie at 71 toes posted this on the perfect day - my birthday!

So of course I just HAD to try it.

But, in order for me to be able to eat it, I made some adjustments (but nothing major).

Here you go:

4 oz. butter (one cube or 1/2 cup)
7 oz. of Green and Black's Mint Chocolate
Melt on stovetop

Crack 4 large eggs into a mixing bowl with
3/4 c. Coconut sugar.
Beat together

Add 1 tsp. vanilla
Stir in melted chocolate mixture.

Sprinkle 1/2 c. spelt flour and
1/4 tsp. baking powder over the top and stir until barely combined. 
Pour in greased Bundt pan.

Bake at 375 degrees for 15 minutes.
Cake will not look done.
Take out and let sit for 15 minutes (I set the timer again).
Serve immediately after the second 15 minutes is up. 
Warm and gooey. 
Serve with a scoop of vanilla ice cream and berries if you wish.  

This cake was a BIG hit with the whole family! It get's to be added to our collection!

And you know - it's even good cold. There was one sliver of a piece that I finished off this morning (after all, it was my birthday cake!
