Carrot Cake Breakfast

I found this recipe almost 2 years ago at! I keep healthy recipes I want to try in a file folder in my room. Finally this recipe made its way out of the filing cabinet and into my recipe box.

It sounded interesting and I needed something new for breakfast. The night before I decided to try this I had grated carrots in my new Vitamix blender (LOVE IT!) so the carrots were all ready to go and it was super easy.

Here is the recipe:

1 cup yogurt
1 T maple syrup
1 tsp vanilla
1/8 tsp salt
1/4 tsp cinnamon
1/4 tsp cardamom (didn't use this)
1 T chia seeds
1 1/2 cup grated carrots
1/3 cup chopped walnuts
1/4 cup raisins
1/2 cup shredded coconut, unsweetened

Combine yogurt, syrup, vanilla, salt, cinnamon, cardamom and chia seeds. Mix well and let set up for 5 minutes (or overnight in the fridge - that would really make breakfast fast and simple!)

Toss carrots, nuts, raisins and coconut in a bowl and top with yogurt mixture. Or you can also mix it all together. Yum!

Typing this makes me want to make it again. It was really good and it did taste like carrot cake (raw version of course).
