Christy's Home-made Granola

I have tried a few of her recipes (that she posts every Thursday)! You can find this one here.

Here is the recipe:

Mix in large bowl and set aside:
5 cups oats
1 cup protein powder
1 cup coconut flakes
1 cup whole almonds
1 cup pecan pieces
1 cup dried cranberries
1 cup dried apricots, diced
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/4 cup flax seeds

Then mix in saucepan:
1/4 cup brown sugar (I used coconut sugar)
1/2 cup coconut oil
1 cup honey
1 tsp salt
2 tsp vanilla
1 tsp cinnamon
Heat until sugars are well dissolved but not boiling.
Pour over dry ingredients.
Spread out on cookie sheet.
Bake at 325 degrees for 12 minutes.
Remove from oven, flip over in sections and bake another 10 minutes.
Let cool.

Carrot Cake Breakfast

I found this recipe almost 2 years ago at! I keep healthy recipes I want to try in a file folder in my room. Finally this recipe made its way out of the filing cabinet and into my recipe box.

It sounded interesting and I needed something new for breakfast. The night before I decided to try this I had grated carrots in my new Vitamix blender (LOVE IT!) so the carrots were all ready to go and it was super easy.

Here is the recipe:

1 cup yogurt
1 T maple syrup
1 tsp vanilla
1/8 tsp salt
1/4 tsp cinnamon
1/4 tsp cardamom (didn't use this)
1 T chia seeds
1 1/2 cup grated carrots
1/3 cup chopped walnuts
1/4 cup raisins
1/2 cup shredded coconut, unsweetened

Combine yogurt, syrup, vanilla, salt, cinnamon, cardamom and chia seeds. Mix well and let set up for 5 minutes (or overnight in the fridge - that would really make breakfast fast and simple!)

Toss carrots, nuts, raisins and coconut in a bowl and top with yogurt mixture. Or you can also mix it all together. Yum!

Typing this makes me want to make it again. It was really good and it did taste like carrot cake (raw version of course).

Green Smoothie

This recipe is from The Rawtarian.

It is bright green and YUMMY. My anti-spinach eaters drank it up (because they would rather drink spinach than eat it raw.

Yep, I need to remember the BEFORE pictures :)

1 ripe banana
1 apple - chopped and seeds removed
2 cups loosely packed spinach
1/2 lemon - peeled
1 sprinkle cinnamon
1/2 cup cold water

1/4 cup berries (strawberries or raspberries) optional

Blend in high speed blender until smooth.

Best Cocoa Cake

I got this recipe from a friend a few months ago - maybe closer to a year. I stuck it in my "Healthy Recipes to Try" folder. Finally this week I decided to try it and boy, I was glad I did!

Here's the recipe:

1 cup butter
3 cups Coconut sugar
4 eggs
2 tsp vanilla
3/4 cup raw cacao
3 tsp. baking soda
1/2 tsp sea salt
3 cups spelt flour
1 1/3 cup sour cream
1 1/3 cup boiling water

Combine all ingredients and blend until smooth.

Bake at 350 degrees for about 35 minutes.

Makes 1 three-layer cake OR 1 9x13 cake.

Somehow I need to remember to take a picture BEFORE we eat it.

But everyone LOVED it! EVEN my picky eaters!!
