I love LaraBars. But I don't always buy them. Where I live it is hard to find them. We have a Safeway and a Walmart close. And I've only been able to find them at Safeway. When they are on sale, I have been able to buy them for $1.00-$1.25. So we buy them sparingly and when they are on sale.
The other day my husband bought some dates. I had never eaten a date. They looked kind of gross (so I didn't blame my kids this time for not trying them). We opened them up and put a walnut in each half. Yum-O!! I begged the kids to try these because they were so good - but I didn't do very well in persuading them.
We needed to use them up so that they didn't go bad and I knew that I wasn't going to have much help finishing them off from anyone in my house (except for the husband).
I remembered that I saw a recipe online for homemade LaraBars once but I didn't think that I would ever really try it.
I googled and found a recipe (and some variations) but now I can't even find the sight.
Darn it. I wanted to visit it again!!
Here is what I did:
1/2 cup of dates
1/3 cup of nuts (I used walnuts for 1 batch and peanuts for the other)
1/8 tsp cinnamon
1. Puree dates in a food processor until a paste.
2. Remove from processor and into a bowl.
3. Without cleaning processor - chop nuts fine.
4. Add to date paste.
5. Add cinnamon.
6. Mix with hands.
7. Make into bars or balls.
I chose to do balls because they are so cute. And I think they are much funner to eat.
Each batch will do 2 bars. This is how many balls that 2 batches make.
