When I think or hear Chia, I think "Ch-ch-ch-chia!"
But I have come to love this seed.
Tonight I used it in place of eggs. We have a missionary in our area that is allergic to eggs and wheat. I was able to find a cookie recipe that didn't use an egg last time he ate at our house and it was his first cookie in a long time. Tonight I made him brownies (below) but instead of using eggs I used Chia gel.
Mix 2 tablespoons in 1 cup of water and let sit overnight. (In my case, I didn't remember the night before so they only soaked for about 4 hours)
I halved the brownie recipe because I didn't want to waste a cup of butter and 2 cups of coconut sugar on this experiment if it didn't turn out.
But, I should have made the whole recipe. They were so good. They were gooey too.
My kids AND husband ate them and loved them. And I think the missionary loved them as well.
Wonder what else to make with Chia seeds?
Chia Pudding 1
3 cups milk
1/2 cup chia seeds
1 teaspoon vanilla
Mix and refrigerate overnight.
OR
Chia Pudding 2
1/2 cup chia seeds
2 cups almond milk
1 dropperful of Stevia
1 tsp vanilla
1/2 tsp cinnamon
Mix and refrigerate overnight.
I've tried these recipes using goat milk and almond milk but I hear that coconut milk is really good too.
I'm definately buying more of this for my year supply!
