This book saved me 5 or 6 years ago when I was trying to eat healthier!

I am in the process of going through our recipe box and cleaning it out. We have so many recipes in there that we hardly ever use. So one of my projects is to re-make these recipes and see if we really want to keep them in our box.
These were one of our first ones to try because I needed to use some potatoes.
The kids were pretty happy about these:
Homemade Tater Tots
4 medium sized russet potatoes (cooked)
1 cup whole grain flour
1/4 minced shallot (or onion)
1 Tbsp salt
1 Tbsp pepper
Dash of cayenne pepper
Absorb extra liquid in a clean towel or paper towels.
Combine the dry ingredients. Add to the shredded potatoes and mix well.
Get fryer ready (I used coconut oil in a pot) she recommended a deep fryer but this worked.
Shape your tots - squeeze a little bit into your palm and push it together. Shape into desired form.
Cook tots for about 8 minutes, or until golden brown.
Remove from fryer onto paper towels.
Season liberally right when they come out.
Keep warm until serving.
