Chocolate Ribbon Cheesecake





This recipe is from our favorite Hershey's Book.

I've tweaked some of the recipes to make them healthier. However this one is the whole enchilada! No substitutions done (except for using Raw Cacao instead of Hershey's Cocoa).

But this post is just to brag on a person in our family.

We call him "T". He is our first-born. He is awesome!

I really want to teach my kids about healthy eating and how to take care of their bodies. But I also want my kids to be able to take care of themselves when they leave home. I think this boy is doing great. He can follow a recipe and make yummy things. His specialties are Banana Bread and this Cheesecake.

He isn't too into making "healthy" things though but maybe it will sink in someday.

But I'm gonna enjoy this kid and teach him all I can for the next year (how in the world do I have a SENIOR!!)

Waffles



These have become our Sunday morning favorite tradition. We've been making waffles on Sunday for years. 

Waffles

2 eggs
2 cups whole grain flour
1 3/4 cups milk
1/2 cup melted butter
1 Tbsp coconut sugar
4 tsp baking powder
1/4 tsp salt

Heat waffle iron.
Mix ingredients.
Pour batter into waffle iron and cook.

For the best waffles ever - top with Almond Butter and Maple Syrup! Those things are to die for!

Raw Chocolate Fudge Bites

Raw Chocolate Fudge Bites

3/4 cup pitted dates
1/2 tsp vanilla
1/16 tsp salt
2 Tbsp cocoa
2 Tbsp shredded coconut
1/2 cup pecans
optional: chocolate chips

Blend in food processor.
Squish dough together.
Form into balls, bars, etc.
And enjoy!

These are SO good and easy to make.

Happy day!

This was one of my most favorite days!

We went to The Gila Valley Temple. All of us.

We got up early, did baptisms and then went to breakfast.

What a great day!

But today is their LAST day of school!

I get to have them all back! No school schedules (sort of)!

We have a CRAZY summer ahead of us and I am so excited. This will probably also be our last summer all together. T is planning to go on a mission right after graduating high school next year. (Why are my kids getting so old? How did that happen!)

Next year we'll have THREE in high school. Our oldest is a senior and our baby is in kindergarten. What a year it will be!

I just love all of these kids SO much!

Black Beans and Spanish RIce



I found these beans from the Unconventional Kitchen here.

Cafe Rio Black Beans

2 T olive oil
2 T chopped onion
2 cloves garlic, minced
1/2 tsp cumin
1 15 oz can of black beans
8 T tomato sauce
A little bit of sweetener

Heat oil in large skillet.
Add onions, garlic, cumin.
Saute.
Add the beans with liquid, sweetener and tomato sauce.
Simmer for 10 minutes.

(I added some shredded Elk to our beans)

And the rice was in my Betty Crocker cookbook (with my updated ingredients)

Spanish Rice

2 T coconut oil
1 cup uncooked long grain rice
1 medium onion, chopped
2 1/2 cups water
1 1/2 tsp salt
3/4 tsp chili powder
1/8 tsp garlic powder
1 small green bell pepper, chopped
1 can tomato sauce

Heat oil in 10-inch skillet over medium heat.
Cook rice and onion in oil about 5 minutes stirring frequently until rice is golden brown.
Stir in remaining ingredients.
Heat to boiling; reduce heat to low.
Cover and simmer about 30 minutes, stirring occasionally.

We had romaine lettuce on the side and the kids make their own lettuce wraps. 
We also had different  toppings.

What a yummy dinner!

Nice cream



I have been seeing Nice Cream all over Instagram!

So I just had to try it!

 And it is super easy!

Banana Nice Cream
2 bananas
Almond milk

Slice bananas and freeze
Add frozen bananas and small amount of Almond milk to blender.
Blend well adding more milk if necessary.

Yum!

Chocolate Chip Quinoa Cookies

When my kids came home for lunch the other day,
I told them I had a STELLAR snack ready for them! 

Grapes on a stick
Raspberry smoothies
and Quinoa Cookies

This is the first time since school started that I have ALL of my kids home after school. 
Boy is it nice! 

This is H trying not to show how much he likes these cookies! He is one of my toughest critics!

Most everything I have tried from her has been SO good!

And these didn't disappoint! The kids all agreed that I could make these again. Yay!!

Chocolate Chip Quinoa Cookies

1/2 cup minus 1 Tbsp quinoa flour
1/4 tsp baking soda
1/8 tsp salt
2 Tbsp coconut sugar
2 Tbsp xylitol
2-4 Tbsp chocolate chips (optional)
up to 2 Tbsp milk
1/2 tsp vanilla
1 Tbsp plus 1 tsp coconut oil

Preheat oven to 310 degrees.
Mix dry ingredients.
Mix wet ingredients.
Combine wet and dry ingredients.
Add more milk if needed.
Shape into balls.
Flatten slightly.
Bake 8-9 minutes (leave on tray for 15 minutes if you can wait that long :)

These make 6-8 cookies. I doubled the recipe and it was the perfect amount for an after-school snack.

Quinoa Wraps



Here is another one of my favorite things to do with quinoa.

Make my favorite quinoa.

Marie's Favorite Quinoa

2-3 Tbsp coconut oil
1 bell pepper or 4-5 small peppers, diced 
1/2 onion, diced
1 cup cooked quinoa
Salt, pepper, garlic powder to taste

Saute peppers and onion in oil until onions are translucent. 
Add quinoa and spices and cook through

Enjoy!

This time I put the quinoa inside of some cute romaine lettuce. LOVE it!

Quinoa for breakfast



One of my favorite things to make is Quinoa. I LOVE sauteeing onions and peppers and then adding quinoa and spices. It is SO good!

Well, I had some left overs and thought it made a great breakfast. Yep I was right! 

I just added a couple of eggs and YUM-O!

(Quinoa above was cooked with purple onions, green peppers and broccoli)

I love quinoa for breakfast!

1/2 cup frozen raspberries
1 cup orange juice
1/2 cup vanilla yogurt
1 banana

Blend and enjoy!

Gogurt



From the Unconventional Kitchen (again :). Love this site!!! Be sure to go there because she has a video for this stuff!

Gogurt
1 C plain yogurt
3-6 Tbsp sweetener (honey, maple syrup, all fruit jam)
Mix ins: frozen berries, coconut, bananas, peanut or almond butter, cocoa powder, etc.
Blend.

This is what I made:

Berry Gogurt
1 C plain yogurt
1 C fresh or frozen berries
3-6 Tbsp all fruit jam
1 tsp vanilla
Blend.

Chocolate Fudgesicle Gogurt
1 C plain yogurt
2 Tbsp cocoa powder
4-6 Tbsp maple syrup
1 tsp vanilla

Blend. Pour into molds. Freeze hard.

Amazon has these molds too. I'm gonna get some quick!

Cilantro Lime Brown Rice


This recipe is another from the Unconventional Kitchen.

Easy and so good!

Cilantro Lime Brown Rice
6 cups water
3 T chicken bouillon
4 tsp minced garlic
1/2 bunch cilantro
1 can green chilis
3/4 tsp salt
1 T butter
1/2 onion
Juice of 1 lime
3 C short grain brown rice

Pulse cilantro, green chilis, salt, water, chicken bouillon, and onion together in a blender. (Tell your kids that this is their smoothie for the day - they will freak out! :)

In a rice cooker add brown rice, mixture from the blender, lime juice and butter.

Cook on brown rice setting.

This was a nice treat to come home to after a 3 hour meeting!
