Hershey's Chocolate Oatmeal Cookies
We got a Hershey's cookbook when we were married.
I've tried making more recipes in the last couple of years than I had in the last 17 years!
But, this time I health-ify the recipes.
And they are really good! These are one of our favorite cookies.
Here's the healthy version:
Chocolate Oatmeal Cookies
1 cup butter, softened
2 1/2 cups coconut sugar
2 tsp vanilla
1 1/2 cup spelt flour
1/2 cup Cacao
1 tsp baking soda
1/2 tsp salt
3 cups quick oats
1/2 cup chopped nuts (optional)
Heat oven to 350 degrees. Mix all ingredients together. Drop by rounded tablespoons onto ungreased cookie sheet. Bake 11-12 minutes or until set; cookies will be slightly moist in center. DO NOT OVERBAKE. Pull these out of the oven before you think they are done.
